Stir-fried dried shrimp and vegetables is a quick and healthy way to feed a hungry busy family inexpensively. This colorful, fresh-tasting stir-fry doesn’t take long to prepare, Serve this over noodles or steamed rice.

 If you omit the shrimp, these vegetables can be a delicious, colourful base for grilled chicken or fish. And feel free to add some other vegetables to this dish.

Ingredients for Stir-fried dried shrimp and vegetables

1/2 pound shrimp
1/2 cup stock
1 onion
1 or 2 green peppers
2 slices fresh ginger root
2 tablespoons sherry
1 tablespoon soy sauce
4 celery stalks
1 tablespoon cornstarch
2 tablespoons oil
1 1/2 tablespoons oil
2 tablespoons water
1/2 teaspoon salt (or to taste)

Steps to cook Stir Fried Shrimp And Vegetables recipe

1, Prepare fried rice according to package instructions, set aside on warm.

2. Shell and devein shrimp. Mince ginger root; then combine with sherry and soy sauce. Add to shrimp and toss. Let stand for about 15 minutes, turning it occasionally.

3. Dice green pepper, onion and celery. Blend cornstarch and cold water to a paste.

4. Heat oil up. Add shrimp and stir-fry until it become pinkish (about 2 to 3 minutes). Remove from pan.

5. Heat remaining oil. Add salt, then diced vegetables; stir-fry to soften slightly (about 1 to 2 minutes).

6. Stir in stock and heat quickly. Then cook, covered, 2 to 3 minutes over medium heat.

7. Return shrimp; stir in only to reheat and blend flavors (about 1 minute). Then stir in cornstarch paste to thicken, and serve  this over  steamed rice immediately while hot.
