Watercress Sparerib Soup

Watercress Sparerib Soup  is well known for its nutraceutical value. In addition to its high vitamin C and antioxidant Beta-carotene contents, it is also rich in vitamin E and is a natural antibiotic. And this soup is often used in complementary medicine to speed up detoxification processes; clear heat in the body and nourish the lungs. In this soup, watercress is boiled with  sweet apricot seed,figs, bitter apricot seed and spareribs to enhance its taste and nutritional value.

Watercress Sparerib Soup

Ingredient for Watercress Sparerib Soup:

 350 gm watercress (chinese:xi yang cai)
 4 dried figs (wu hua guo), halved and rinsed
 2 tablepsoons sweet apricot seed (chinese: bei xingren), rinsed
 2 tablepsoons bitter apricot seed (chinese: nan xingren), rinsed
 500 gm spareribs, rinsed and scalded with boiling water
1 teaspoon salt, or to taste
 5 slices fresh ginger root
3 litres (12 cups) water

Step by step to cook Watercress Sparerib Soup:

1. Rinse the watercress well,then pluck the tender shoots with its leaves intact, discard the main longish stems. Soak in lightly salted water for about 1 hour, then rinse again in a couple of changes of water and drain.

2. Bring the water to a boil in a stockpot. Add all the ingredients, except the watercress and salt, and cook over high heat for 20 minutes. Reduce the heat to low and simmer uncovered for 1 hour. Add the watercress and continue to simmer for another 1  hour. Season with the salt and remove from the heat. Serve hot in individual serving bowls.

Many benefits from eating watercress are claimed, such as that it acts as a stimulant, a source of phytochemicals and antioxidants, a diuretic, an expectorant, and a digestive aid.It also appears to have cancer-suppressing properties; it is widely believed to help defend against lung cancer.Due to its high iodine content, watercress has a strengthening effect on the thyroid gland, thus beneficial for sufferers of hypothyroidism.

In addition, watercress is a known inhibitor of the Cytochrome P450 CYP2E1, which may result in altered drug metabolism for individuals on certain medications (ex., chlorzoxazone).
