How to cook Fish Flavored Shredded Pork

fish Flavored Shredded pork ( pinyin: Yu Xiang Rou Si ,also named:Yu-Shiang Shredded Pork)  is  a dish with a distinctive flavor and in the unique style of Sichuan cuisine. Please remember that Fish Flavored Shredded Pork has no fish but has the flavor of fish! Its sour, sweet, salty and spicy tastes simply give uniquely unmatchable gourmet experience.

The story of this Fish Flavored Shredded Pork:

Legend has it that long ago, Sichuan, there is a business family in which the members liked to eat fish a lot and were quite demanding in seasoning the dishes they made. Therefore, They were very particular about cooking fish and when they were making fish dishes, they added shallots, ginger, garlic, yellow wine, vinegar and soy sauce, which would not only flavor the fish but also get rid of  the bad fishy smell of the ones that had just been caught.

One  night,, a housewife of a family was preparing an ordinary pork dish while waiting her husband to return home, she thought that it should not be any waste of the large amount sauce that had just been used for the previous fish dish. So that she added the sauce to the one which she was making. However, she feared that the taste would be bad which would make her husband dissatisfied. Her husband returned from his business and felt quite hungry. He sampled the pork dish and finished it quickly before his wife served rice. He asked her hurriedly how the special and delicious pork was made and she gave the answer. She was amazed by the praise of her husband, so she added the fish sauce to other daily family recipes. Locals called this kind of dishes “Fish flavored Fry”, Thus, a special flavor dish was produced. Sichuan people had listed them into their daily menu with some improvements and made them so popular all over China.

Fish Flavored Shredded Pork

Ingredients for Fish Flavored Shredded Pork

150 g Pork, shredded ( about 6 cm length and 0.2 cm width )
30 g Black fungus, soaked
20 g Bell pepper, shredded
30 g Carrot, shredded
2 tbsp salad oil
1 stalk Green onion, shredded
2 cloves Garlic
10 g Pickled chilli
10 g Ginger

1/4 tsp Chicken powder
1/2 tsp Cornstarch
1/3 tsp Salad oil

1 tsp Salt
1/2 tsp Chicken powder
1 tsp Sugar
1 tsp Vinegar
1 tsp Light soya sauce
1 tbsp Starchy solution

 How to cook Fish Flavored Shredded Pork ?

1.Mix the pork shreds with the marinade and let stand for about 15 minutes. Mix the sauce ingredients in a small bowl and set aside.

2.Soak the black fungus and shred thinly. Finely chop ginger, onion and pickled chilli.

3.Heat up a skillet with oil, adding pork. Stir until pork is almost cooked. Add in chopped ginger, onion and pickled chilli until fragrant. Add in black fungus, bell pepper and carrots. Pour in the prepared sauce. Stir until well-combined and dish off.


Fish Flavored Shredded Pork is best eaten with a bowl of warm Chinese rice and the combination will make you unforgettable.

Tips:In this dish,The pork is stir-fried with the fish seasoning, which can also be used to cook eggplant, eggs and other dishes.
