How to make Dan Dan noodles recipe

Dan Dan noodles  is a famous and widely popular sichuan dish,which gets its name from the shoulder poles that street hawkers used to carry their edible noodle dishes. There are almost as many different ways of preparing this Szechuan recipe as there are Chinese chefs! Today I’d like to share one that lend itself to this authentic Szechuan dish. Itconsists of a spicy sauce containing preserved vegetables, chili oil, Sichuan peppers, pork, and scallions served over noodles.

There one thing you may find in every recipe for Dan Dan Noodles is a spicy sauce that includes sesame paste (peanut butter makes a handy substitute,Sesame paste is  particularly true in American chinese cuisine) and hot chili oil.

To make Dan Dan Noodles, you will need:
Ingredient Dan Dan noodles recipe:

Noodles: 1000g
Pea seedings: 100g

Seasonings for Dan Dan noodles recipe:

Sesame soy: 100g
Soy sauce: 120g
Aromatic vinegar: 50ml
Marshed garlic, scallions, crushed pepper, red chili oil(200ml), Chicken soup(400ml,the chicken soup should be cooled down, then the flavor can be more tasty……), Chili Seed(20g)

How to make Dan Dan noodles recipe:

1. Prepare a bowl, and put all seasonings in.

2. Add noodles into boiled water till it is cooked(not too long time needed).When noodle is near to cooked, put pea Seedings in.

3. Take noodles and pea seedings out and put into the bowl with the combination of all seasonings.

1. If you like, can add some celery, it is good too.

 2. Don’t put too much sesame in.

3. It’s better to put some minced peanut.

4,I absolutely love chilli, but this dish is right on the edge of my chilli tolerance. Personally, I think that’s the beauty of it, and you’ve just got to go for it, but by all means halve or quarter the amount of chilli for a mellower dish.

5,sichuan peppercorn adds a sharp bite to the sauce. How much to use comes down to personal preference. If you’re unsure, start with 1/2 teaspoon and do a taste test. You can also leave it out of the sauce altogether and serve on the side as a condiment, allowing everyone to help themselves.
