Dragon Well fish Slices is one of Hangzhou’s most famous specialities, This dish is a good example of using tea as an ingredient to add subtlety to a dish in a light, refreshing, clear sauce.
Usually,we choose Longjing (Dragon Well) tea to cook this recipe.Renowned for its high quality and intensely fragrant body, Longjing tea is well regarded as one of the most famous teas produced in China. The coolness of this tea on one’s tongue is quite evident in this recipe. However, if you don’t happen to have Dragon Well tea, making this dish with regular Chinese green tea would also work if you’re craving tea-infused shrimp.
Recipe: Dragon Well Fish Slices

Ingredients for Dragon Well Fish Slices:
300 grams (0.661b)of freshwater fish (preferably grass carp)slices
1 gram (Itsp) Dragon Well Tea (or other kind of green tea)
1 egg white
50 grams (3tbsp) water
10 grams (2tsp) cooking wine
1 gram (l/4tsp)MSG
5 grams (5/6tsp)salt
250 grams (1 cup) cooking oil
20 grams (Itbsp)cornstarch-water mixture
Directions to cook Dragon Well Fish Slices:
1, Cut the headless, tailless, boneless and skinless fish into slices of about 3 mm (0.12 in) thick, 5 cm (2 in) long and 4 cm (1.5in)wide.
2, Apply the mixture of the egg white, 2 grams (l/3tsp)of salt and cornstarch onto the fish slices. Add 50 grams (3tbsp) of hot water into a pot to boil the tea, pour out the water and keep the tea leaves for later use.
3, Use a strong fire to heat the oil in the wok to about 110-135℃. Now change to a medium fire, throw in the fish slices and stir-fry them. Then move them onto a plate. Heat 10 grams (2tsp) of oil in the wok, add in the water, MSG, and 3 grams (l/2tsp) of salt. Add the mixture of cornstarch and water to thicken the sauce. Put in the fish slices and tea leaves to stir-fry. Spread some sesame oil in the wok and put the dish on a plate to serve.
Tips: Apart from the middle section of the fish used to cook this dish, the other parts that have been cut off can be used to make fish soup to produce two dishes with one fish.
